This soup makes you think a lot: what is in it, why does it look so transparent, why does it take me so long to eat it? Well that's why it is called Contemplating Dragon Soup because the dragons sure think a lot while eating this soup. |

Ingredients: |
White and green vegetables (for instance onion, cole, cucumber, peas and leek), one egg, two brown (or dried Chinese Mushrooms), some Chinese rice noodles, some sesame-oil, two spoons of soy-sauce, two toes of garlic, two tea spoons of ginger powder, pepper and salt, some fresh celery and parsley, one tea spoon of sereh (dried lemon grass), some olive oil, two tea spoons of sesame-oil and a litre (quart of a gallon) water. |

Preparation: |
Cut the vegetables, the mushrooms and the garlic into pieces and fry them for two minutes in some olive oil. Add the water and the herbs and cook it, together with the fried vegetables for half an hour. Add the soy sauce and the sesame-oil. Add the rice noodles and cook for two minutes. Add the egg and stir gently. The soup is ready to serve.
